Chef José Carlos Fuentes invites you to try his “Gourmet Menu”, an experience that begins with an Allard version of typical Madrid finger foods. It then moves onto dishes with clear influences from the mediterranean and Japanese cuisines that combine to take the diner on a journey through the seas and mountains, amongst which can be found exceptional products including: the Iberian tomato and Barbastro rose – enjoy the intensity of this combination in all its different forms; the foie with a refreshing touch of
courgette and Iberian ice cream; the barnacles with their hint of the coastal regions of Galicia countered with a touch of the Asian; the broad beans out of our garden in all their Spanish glory and a Japanese culinary technique that can be seen in a display of show cooking in the room, where you can taste the just-cooked baby squid; the surprise that is the reef stonefish encased in gossamer; the intense flavour of the monkfish accompanied by a breaded hors d’oeuvre made in front of you; the traditional roast suckling pig from
Segovia with an exotic mixture of melon and gochu jang; and, taking its inspiration from a 19th century recipe, the loin of pork with “Dukes’ powder”. In the final stage of this gastronomic journey, the Chef offers seasonal strawberries in many and varied forms and, to conclude, there is a dessert with all the fine flavour of a bourbon yet delicately sweet. As a final treat, enjoy our dessert trolley featuring petits fours, where confectionery takes pride of place.
There is the opportunity to meet the Chef’s team, who will be there to present and finish off the dishes interacting with our diners. Also included in the experience is a meet-and-greet with Chef José Carlos Fuentes and Head Chef Baptiste Guyonnet in the ‘Aquarium’, before they guide you around their kitchen and invite you to share a dish with them in the finest spot in the restaurant, from which you can observe as the team at El Club Allard creates their dishes.
